This multigrain Ayurvedic khichdi is a perfect combination of taste and health

Olive oil 1 tbspOnion, 1 tbsp, finely choppedGinger, 1 tbsp, finely chopped
1/2 green chilli, chopped1 tbsp garlic, finely choppedA pinch of turmeric
Black pepper 1/2 tspLittle waterCumin powder 1/2 tbsp
Coriander powder 1/2 tbspCurry powder 1/2 tbspA pinch of asafoetida
Basmati rice 1/2 cup, soakedMoong dal 1 cup, soaked1 tbsp salt or to taste
1/2 cup broccoli or cauliflowerSpinach or kale 1/2 cup1/2 cup celery
1 carrot, chopped
Step 1
Heat olive oil in a pan and saute onion, garlic and ginger
Step 2
After this add green chillies, turmeric, black pepper. Be careful that the spices do not stick to the pan. If they are sticking then sprinkle some water on them so that they do not burn.
Step 3
Now add cumin and coriander powder to it, make sure the flame is low. Finally add asafoetida and mix everything well
Step 4
Now add rice and moong dal and mix well. Add some water (depending on how thick you want your khichdi). Then add some salt and mix
Step 5
Add all the vegetables and drain the water. Then cover it and let it cook for 5-7 minutes. Finally garnish with some chopped green chillies
